Turkey Lettuce Wraps (Adults Only)

Prep Time: 10 min.
Cook Time: 20 min.
Serves: 2-4
Ingredients:
  • 1 lb. ground turkey
  • 1/2 acorn squash
  • 2 green onion stalks
  • 1-2 carrots
  • 1-2 small gold yukon potatoes
  • 1/2 bunch cilantro
  • 1 head of butter bib lettuce
  • Garlic Salt to taste
  • 1 tspn Paprika
  • 1/2 tsp Cumin
  • 1 tsp cajun seasoning
  • 1 Tbs Coconut Oil
  • 1 Tbs soy sauce (low sodium rec.)
  • 2 Tbs rice vinegar
  • 1 Tbs red wine vinegar
  • 1 tsp Sriracha sauce
Directions:
1. Wash and thoroughly dry all veggies
2. Tear apart 3-4 lettuce leaves per person (make sure they are very dry)
3. Finely chop squash, green onion, carrots, potatoes and cilantro
4. Brown ground turkey
4. Place coconut oil in saute pan and saute squash, green onions, carrots and potatoes until tender and add seasonings
6. Once veggies are sauteed mix them into browned ground turkey in one pan
7. Add cilantro to veggies and ground turkey and set aside
8. In a small bowl combine and mix soy sauce, rice vinegar, red wine vinegar and Sriracha sauce
9. Spoon veggie/ground turkey mix onto lettuce leaves
Yes, that's a paper plate...on late nights I use paper plates then recycle the plate. Much easier for busy moms.
10. Drizzle soy sauce combination on top
11. Serve and enjoy
